Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh dari perbedaan konsentrasi asam asetat terhadap karakteristik fisikokimia kolagen kulit ikan gabus (Channa striata). Penelitian ini menggunakan perlakuan perbedaan konsentrasi asam asetat (CH3COOH) yaitu 0,10 M, 0,20 M, dan 0,30 M dengan tiga kali pengulangan. Hasil data dianalisis dengan cara analisis statistik parametrik Rancangan Acak Kelompok (RAK). Hasil penelitian menunjukkan rendemen kolagen sebesar 42,55%. Karakteristik kimia kolagen menunjukkan nilai kadar protein 45,47% dan kadar abu 0,27%. Karakteristik fisik kolagen yang dihasilkan yaitu viskositas 8,35 mPa.s, analisis termal menunjukkan suhu puncak pelelehan adalah 75,5 0C serta hasil uV-Vis menunjukkan adanya serapan maksimum pada panjang gelombang 280 dan 290 nm yang merupakan panjang gelombang dari kolagen.
