Abstract

Penelitian ini bertujuan untuk mengetahui karakteristik fisik, kimia dan organoleptik jipang ubi kayu dengan penambahan jenis dan konsentrasi gula yang berbeda pada formulasi jipang ubi kayu. Penelitian ini dilaksanakan di Laboratorium Kimia Hasil Pertanian dan Laboratorium Sensoris Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya, Indralaya. Penelitian ini dilaksanakan pada bulan Februari sampai dengan Juli 2013. Penelitian ini menggunakan Rancangan Acak Lengkap yang disusun secara faktorial (RALF) dengan dua faktor perlakuan dan setiap perlakuan diulang sebanyak 3 (tiga) kali. Faktor A yaitu jenis gula (gula pasir dan HFS) dan faktor B yaitu formulasi jipang (20% gula : 80% ubi kayu, 30% gula : 70% ubi kayu dan 40% gula : 60% ubi kayu). Parameter yang diamati meliputi rendemen, kadar air, kadar abu, total padatan terlarut, densitas, warna dan uji organoleptik (rasa, warna, dan tekstur). Hasil penelitian menunjukkan bahwa perlakuan formulasi jipang berpengaruh nyata terhadap nilai rendemen, kadar air dan total padatan terlarut, sedangkan perlakuan jenis gula berpengaruh nyata terhadap lightness dan chroma jipang ubi kayu yang dihasilkan. Interaksi jenis gula dan formulasi jipang berpengaruh nyata terhadap kadar air jipang ubi kayu. Sifat fisik, kimia dan organoleptik jipang ubi kayu terbaik diperoleh pada perlakuan A|Bj (20% gula pasir dan 80% ubi kayu) dengan rendemen 26%, kadar air 5,26%, kadar abu 0,36%, total padatan terlarut 1,70%, densitas 0,39 g/mL, warna dengan nilai lightness 64,43%, chroma 13,57% dan hue 75,30° dengan kriteria kuning kemerahan atau Yellow Red, serta sifat organoleptik dengan skor kesukaan rasa 3,4, tekstur 3,24 dan warna 3 (suka).
