Abstract

The objective of this research was to determine of The objective of this research was to determine of anti browning addition on fish flour and as raw materials of pempek flour. The research was conducted at Chemical of Agricultural Product Laboratory and Sensory Laboratory, Agricultural Technology Department, Agricultural Faculty, Sriwijaya University, from July 2017 to December 2017. The research used a Factorial Completely Randomized Design consisting of two factors. The experiment was conducted in triplicates The first factor was anti browning agent and the second factor was concentration of anti browning agent addition. The following parameters were observed, including physical (color), chemical (moisture content, ash total, protein content, and fat content), and sensory (hedonic test for aroma, color, texture and taste). The results showed that kind of antibrowning agent had significant effects on color (lightness), moisture content, protein content and fat content). And on different consentration of both had significant effects on color (lightness and hue), total ash, and fat content. Furthermore, interaction of two factors showed significant effect on color (lightness) fat content and protein content. The treatment A1B3 (natrium metabisulfit on 0,6% consentration) is the best treatment based on lightness on color analysis.
