Abstract

Penelitian ini bertujuan untuk mengevaluasi pengunaan konsentrasi rumput laut dan gula aren untuk membuat nata de seaweed terhadap karakteristik nata.. Penelitian ini dilaksanakan pada tanggal 02 Oktober 2012 sampai dengan 26 Desember 2012 di Laboratorium Teknologi Hasil Perikanan, Laboratorium Mikrobiologi Budidaya Perairan, Laboratorium Teknologi Hasil Pertanian dan Laboratorium Bioproses Teknik Kimia Universitas Sriwijaya Indralaya. Rancangan yang digunakan berupa RAK Faktorial dengan dua factor perlakuan yang diulang sebanyak tiga kali. Faktor perlakuan terdiri dari konsentrasi rumput laut (1%, 2%, 3%) dan penambahan gula aren (7.5%, 10%, 12.5%). Parameter yang diamati meliputi rendemen, ketebalan, kekenyalan, kadar air dan kadar serat pangan tidak larut air. Perlakuan gula aren dengan konsentrasi yang meningkat membuat kecendrungan kadar air nata de seaweed semakin menurun sedangkan Perlakuan gula aren dengan konsentrasi yang meningkat membuat kecendrungan serat pangan tidak larut air nata de seaweed semakin naik. Kombinasi perlakuan gula aren 10% dan rumput laut 3% (G2R3) menghasilkan kadar serat tidak larut air tertinggi yaitu 1,89%
