Abstract

Penelitian ini bertujuan untuk mempelajari karakteristik mutu abon belut sawah (Albus zuieuw) dan belut rawa (.Synbranchus bengalensis Mc. Clell). Penelitian ini dilaksanakan dari bulan Juni sampai dengan bulan.November 2005 di Laboratorium Kimia Hasil Pertanian Jurusan Teknologi Pertanian Fakultas Pertanian Universitas Sriwijaya. Penelitian ini menggunakan Rancangan Acak Kelompok Faktorial dengan dua perlakuan jenis belut (B) yaitu belut sawah (B|) dan belut rawa (B2), dan bahan tambahan (S) yaitu santan (Si) dan air kelapa (S:). Hasil penelitian menunjukkan bahwa jenis belut dan bahan tambahan berpengaruh nyata terhadap kadar air abon belut yang dihasilkan. Jenis belut berpengaruh nyata terhadap kadar protein abon belut, sedangkan bahan tambahan berpengaruh nyata terhadap kadar abu dan lemak abon belut. Kadar air tertinggi abon belut terdapat pada abon belut rawa bahan tambahan air kelapa (19,71%) dan terendah pada abon belut rawa bahan tambahan santan (8,41%). Kadar abu tertinggi pada abon belut sawah bahan tambahan air kelapa (8,54%) dan terendah pada abon sawah bahan tambahan santan (5,20%). Kadar protein tertinggi pada abon sawah bahan tambahan santan (17,69%) dan terendah pada abon belut rawa bahan tambahan, santan (13,33%). Kadar lemak tertinggi pada abon belut sawah bahan tambahan santan (28,50%) dan terendah pada abon belut rawa bahan tambahan air kelapa (20,75%). Karbohidrat tertinggi (44,44%) pada abon belut rawa bahan tambahan santan dan terendah (33,1%) pada abon belut rawa bahan tambahan air kelapa. Uji sensoris menunjukkan jenis belut dan bahan tambahan berpengaruh nyata terhadap warna, penampakan, tekstur, aroma dan rasa abon belut. Hasil uji mutu hedonik menunjukkan abon belut sawah bahan tambahan santan paling disukai oleh konsumen
