Abstract
This study aims to determine the best combination of processes in manufacturing lotus tempeh and the total number of living microbes in fermented lotus seeds. This study uses two stages of research design. The first stage was optimizing the treatment for making lotus seed tempeh using the Response Surface Methodology (RSM) Box Behnken design version 19 followed by data analysis using Minitab software version 19. The second stage of the first stage data was carried out by testing the parameters in the form of total fungi, total lactic acid bacteria ( BAL) and water activity using descriptive analysis. Based on the measurements of the processing conditions for lotus seed tempeh, the pH value ranging from 4.70 – 6.80. The results of optimizing lotus seed tempeh contained a total of 5.30 log cfu/gr (2.02 × 105 cfu/gr) fungi with a total lactic acid bacteria(LAB) of 6.66 log cfu/gr (4.62 × 106 cfu/gr) and the aw value of the optimum lotus seed tempeh is 0.85.
