Abstract
This study aims to determine the physicochemical characteristics of collagen from snakehead fish bone and scale (Channa striata). This research was conducted in a laboratory experiment and repeated 3 times. The parameters observed were protein content, ash content, viscosity, extract yield and UV-Vis spectroscopy. The data obtained were analyzed descriptively in the form of tables and graphs, followed by parametric statistical analysis of the different t-tests (Independent Sample t-Test). The results showed that the yield of scale collagen was 46% and bone collagen was 53.33%. Characteristics of collagen chemicals show values of 30% and 45% bone and scale protein levels in acetic acid concentrations of 1,5 M, while a concentration of acetic acid of 0,5 M produces a value of 26,50% scale and 40,50% bone, collagen ash levels of scale 0,11% and bone collagen 0,20% in acetic acid concentrations of 1,5 M, while a concentration of acetic acid of 0,5 M produces a value of 0,13% scale and 0,24% bone. The physical properties of the collagen produced are a viscosity of the scale collagen of 32,9 m.Pa.s and a bone collagen of 35,2 m.Pa.s in acetic acid concentrations of 1,5 M, while a concentration of acetic acid of 0,5 M produces a value of 24,15 m.Pa.s scale and 24,9 m.Pa.s bone. The UV-Vis spectrophotometer results show a maximum absorption at a wavelength of 280 and 290 nm, which is the wavelength of the scale and collagen of snackhead fish bone.
