Abstract

Cuttlefish (Sepia recurvirosta) was marine animals of cephalopoda class. Cuttlefish biota that has seasonal fishing time, easy to reduce the quality and low utilization. This research aims to understand the influence of concentration liquid smoke to the characteristics physical, chemicals and sensory of smoked cuttlefish (Sepia recurvirosta). This study was conducted in october 2017 until january 2018 in the laboratory technology fisheries of agricultural faculty, chem lab technology agricultural products of agricultural faculty and laboratory renewable energy of engineering faculty, sriwijaya university. Cuttlefish used was gotten from Bangka Belitung island and liquid smoke from PT Asap Cair Multiguna Semarang. The treatments were: P0 (without liquid smoke), P1 (liquid smoke concentration 6 %), P2 (liquid smoke concentration 12 %) and P3 (liquid smoke concentration 18 %). The research was designed by using randomized block design (RBD) with 4 treatment and 3 replicated. The results of research showed that the liquid smoke concentration treatment had no significant effected to physical characteristic (hardness) smoked cuttlefish. The chemical analysis showed that liquid smoke consentration had given a significant effect to the moisture content. Had no significant affected to ash content and protein content. The moisture content: (P3) 52,42 %, (P2) 52,74 %, (P1) 53,43 %, (P0) 60,6 % respectively. This value was on quality standard. The hedonic analysis showed that the liquid smoke concentration had no significant affected to the hedonic level of color, aroma, flavor and texture.
