Abstract
Water hyacinth (Eichhornia crassipes) is an aquatic plant that thrives in tropical waters and has the potential as a source of natural ingredients rich in bioactive compounds, including polysaccharides. Water hyacinth (Eichhornia crassipes) is an aquatic plant that thrives in tropical waters and has the potential as a source of natural ingredients rich in bioactive compounds, including polysaccharides. Polysaccharides from water hyacinth have antioxidant properties that can provide health benefits, such as fighting free radicals that have the potential to damage body cells. This study aimed to determine the effect of different extraction methods on the yield, total sugar content and antioxidants of water hyacinth polysaccharides. This study was conducted experimentally in the laboratory using a treatment in the form of an extraction method consisting of 3 levels (hot water extraction method, ultrasound assisted extraction and freeze thawing) and repeated 3 times. The parameters observed in this study included extract yield, total sugar content, antioxidants and functional groups. Extraction of water hyacinth polysaccharides using the Hot Water, Ultrasound and Freeze Thawing methods did not differ significantly in terms of yield parameters and antioxidant activity. However, the Freeze Thawing extraction method was significantly different in terms of total sugar content. In antioxidant activity, the results of the hot water method were 0.53 mg/mL, the ultrasound method was 0.36 mg/mL and the freeze thawing method was 0.43 mg/mL. In the FTIR analysis, the O-H, C-H, C=O and C-O functional groups were obtained, indicating that all extraction methods were able to isolate polysaccharides.
