Abstract

This research aims to analyzc the effict of raw material (fish) on peda kepayang (pangium edule) against water activity (aw), antioxidant activity, total volatile base (TVB), and cyanide content. Research methods used laboratory experimental and descriptive data. The results showed that the water activity (aw) of anchovy peda kepayang was higher (0,84) than silver rasbora peda kepayang (0,83); the IC50 value of anchovy peda kepayang was higher (4905,33 ppm) than silver rasbora peda kepayang (3315,33 ppm); the TVB value of anchovy peda kepayang was higher (6,97 mgN%) than silver rasbora peda kepayang (6,44 mgN%), and the cyanide content of silver rasbora peda kepayang was higher (15,40 mg/kg) than anchovy peda kepayang (12,94 mg/kg), but they are still safe for consumption. The treatment of silver rasbora and anchovy with the addition of kepayang seeds has a significant effect on antioxidant activity and total volatile base (TVB).
