Abstract
The purpose of this research was to observe the content of phytochemical and antidiabetic activity of chinese water chestnut extract (Eleocharis dulcis). This research was conducted in March until May 2019. The method of this study used an experimental laboratory and data analysis was carried out descriptively. The steps carried out include the stages of sampling, sample extraction, calculation yield of extract, quantitative phytochemical analysis (phenolic content, tannin content, and flavonoids content), and antidiabetic activity. The results showed that yield of extract using ethanol 70% in chinese water chestnut (Eleocharis dulcis) had the highest yieldof 2.008%. Quantitative phytochemical tests on chinese water chestnut extract used ethanol 70% had the highest types of flavonoids values of 48.562 mg/ml. The results of antidiabetic activity had the highest value at a concentration of 2000 ppm using ethanol 70% values of 65.744%. Chinese water chestnut extract had the strongest IC50 value in ethanol 70% solvents of 1354.628 ppm.
