Abstract

This study aimed to determine the chemical composition and organoleptic characteristics of lozenges made from the extract of the water lettuce plant (Pistia stratiotes) through experimental laboratory methods. The experimental design used in this study was a Randomized Block Design (RBD) with 4 formulations differing in the concentration of water lettuce extract (30%, 20%, 10%, and 0%). Each formulation was repeated 3 times. The research parameters used include total polyphenol content, moisture content, heavy metal tests for lead (Pb) and cadmium (Cd), and organoleptic tests covering color, aroma, taste, texture, and appearance. The results showed that the total polyphenol content was 95 mg GAE/g for formulation A, 45 mg GAE/g for formulation B, 30 mg GAE/g for formulation C, and 9 mg GAE/g for formulation D. The moisture content of the lozenges ranged from 1.72% to 2.02%. The heavy metal test results showed that lead (Pb) was the only detected heavy metal and had significant differences in each lozenge formulation. The organoleptic values obtained were color (4,72–5,72), aroma (4,88–5,04), taste (4,32–4,52), texture (3,64–5,64), and appearance (5,28–5,68). Based on the research results, it was found that formulation B is the best formulation with a 20% concentration of water lettuce extract. Penelitian ini bertujuan menentukan komposisi kimia dan karakteristik organoleptik tablet hisap dari ekstrak tumbuhan apu-apu (Pistia stratiotes). Penelitian ini dilakukan secara eksperimental laboratorium. Rancangan percobaan yang digunakan pada penelitian ini yaitu menggunakan metode Rancangan Acak Kelompok (RAK) dalam 4 bentuk formulasi dengan perbedaan konsetrasi ekstrak tumbuhan apu-apu (30%, 20%, 10% dan 0%). Masing-masing formulasi dilakukan pengulangan sebanyak 3 kali. Parameter penelitian yang digunakan yaitu kadar total polifenol, kadar air, uji logam berat timbal (Pb) dan kadmium (Cd) serta uji organoleptik yang meliputi warna, aroma, rasa, tekstur dan kenampakan. Hasil penelitian menunjukkan bahwa kadar total polifenol yaitu formulasi A sebesar 95 mg GAE/g, formulasi B sebesar 45 mg GAE/g, formulasi C sebesar 30 mg GAE/g dan formulasi D sebesar 9 mg GAE/g. Hasil uji kadar air tablet hisap ekstrak tumbuhan apu-apu berkisar antara 1,72%-2,02%. Hasil uji logam berat yaitu logam berat timbal (Pb) yang hanya terdeteksi dan memiliki perbedaan nyata pada setiap formulasi tablet hisap. Nilai organoleptik yang dihasilkan yaitu warna (4,72–5,72), aroma (4,88–5,04), rasa (4,32–4,52), tekstur (3,64-5,64) dan kenampakan (5,28– 5,68). Berdasarkan hasil penelitian didapatkan bahwa tablet hisap pada formulasi B adalah formulasi yang terbaik dengan konsentrasi 20% ekstrak tumbuhan apu-apu.
