Abstract

This study aims to determine the effectiveness of lemongrass extract with the addition of chitosan as an anti-fly and antibacterial agent on salted fish. The study uses a Completely Randomized Design (CRD) with 4 treatment levels and 3 replications. The treatments used were variations in the concentration of lemongrass extract and the addition of chitosan sprayed on salted fish, namely A0 (salted fish made without treatment, as control), A1 (0.5% chitosan), A2 (1% chitosan), and A3 (1.5% chitosan). In this study, measurements of temperature and humidity, the number of flies landing during the drying process, color analysis, Total Plate Count (TPC) test, and identification of Coliform bacteria were carried out. The results showed that the frequency of the number of flies landing over 3 days of drying ranged from 4 to 11 flies, with the highest number of flies landing on the control salted fish (A0) and the least number of flies landing on the salted fish treated with A3 (1.5% chitosan). The color test ranged from 15.68 to 38.6, with the highest value on the salted fish treated with A3 (1.5% chitosan). The identification of spoilage bacteria ranged from 2.67 log CFU/g to 3.57 log CFU/g, and no Coliform bacteria were found in the samples treated with 0.5%, 1%, and 1.5% chitosan. Efektivitas Ekstrak Serai (Cymbopogon citratus) dengan Penambahan Kitosan sebagai Antilalat dan Antibakteri pada Ikan Asin (Dibimbing oleh RINTO). Penelitian ini bertujuan untuk mengetahui efektivitas ekstrak serai dengan penambahan kitosan sebagai antilalat dan antibakteri pada ikan asin. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 4 taraf perlakuan dan 3 kali ulangan. Perlakuan yang digunakan adalah perbedaan konsentrasi ekstrak serai dan penambahan kitosan yang disemprot pada ikan asin, yaitu A0 (Ikan asin yang dibuat tanpa perlakuan, sebagai kontrol), A1 (kitosan 0,5 %), A2 (kitosan 1%), A3 (kitosan 1,5%). Pada penelitian ini dilakukan pengukuran suhu dan kelembaban, jumlah lalat yang hinggap selama proses penjemuran, analisis warna, uji Total Plate Count (TPC), dan identifikasi bakteri Coliform. Hasil penelitian menunjukkan frekuensi jumlah lalat yang hinggap selama 3 hari penjemuran berkisar 4–11 ekor lalat dimana jumlah lalat terbanyak hinggap pada ikan asin pada perlakuan A0 (kontrol) dan jumlah lalat paling sedikit hinggap pada ikan asin perlakuan A3 (kitosan 1,5%), uji warna berkisar 15.68-38.6 nilai tertinggi pada ikan asin perlakuan A3 (kitosan 1,5%), identifikasi bakteri pembusuk bekisar antara 2,67 log CFU/g–3,57 log CFU/g, dan tidak ditemukan adanya bakteri Coliform pada sampel perlkuan kitosan 0,5%, 1%, 1,5%.
