Abstract

The process of making fried foods produces physical, chemical and biological hazards that can harm the health of people who consume them. The aim of the research was to analyze the sanitation of vendors and the presence of lead in fried foods at the morning market in the North Indralaya District. This research method is descriptive qualitative. The triangulation used was method and source triangulation, namely in-depth interviews, observation and testing of fried food samples. There were 13 informants consisting of 4 main informants, 8 supporting informants and 1 expert informant who were selected through purposive sampling and 8 fried food samples were selected based on the fried foods that were often purchased by customers. The research results show that vendor use well water sources for cooking and washing purposes. Processing of raw materials is carried out well and the raw materials are selected fresh and suitable for consumption. Vendor serve fried food covered and the fried food is opened when buyers arrive. Vendor use kilos of cooking oil and use it once. Based on lead testing conducted in the Chemistry Laboratory of FMIPA UNSRI on 8 samples of fried snacks, which included fried bananas, bakwan, tempeh, and risoles from the Timbangan morning market, using the AAS (Atomic Absorption Spectrophotometry) method, the results showed that the samples examined were below the threshold limit according to SNI 19-2896-1992. Vendor don't know much about lead which can cause lead in fried foods. The conclusion from this research is that fried food vendor have implemented good sanitation, then no lead was found in fried food and lead exposure levels are still below the threshold value
