Abstract
This study aims to determine the effect of drying temperature on the physicochemical properties of lotus (Nelumbo nucifera) rhizome starch. This research was carried from April to Juny 2021. The study used a randomized block design (RAK) with drying temperature difference treatment consisting of 3 levels (A1 45 C, A2 50 C dan A3 55 C) and wa repeated 2 times. The parameters measured consist of physical analysis (yield, white degree, and granule shape) and chemical parameters (moisture content, ash content, starch content, and amylose content). The results showed that the difference in drying temperature had a significant effect on whiteness, moisture content (8,22%-13,11%) and starch content (20,66%-31,29), but had no significant effect on yield, ash content, amylose content and whiteness.
