Abstract

CHANIA ANGELA ZAMRI. Application of Edible Coating Cassava Starch (Manihot esculenta) and Chitosan on the Characteristics of Eco-Straws from Purun Tikus (Eleocharis dulcis) (Supervisor SITI HANGGITA, R.J., S.TP., M.Si., Ph.D.) Edible coating is a natural coating that is directly formed on the surface of the product and can be eaten because it is made from natural ingredients with the aim of extending the shelf life of a product and inhibiting physical, chemical, and biological changes. This research aims to determine the effect of chitosan concentration as an ingredient in making edible coatings and to find the best treatment regarding the use of chitosan as an ingredient in making edible coatings from cassava starch as a coating for purun tikus straws. This research used a Randomized Block Design (RBD) with 4 treatment levels and 3 replications of the chitosan concentration used, namely 0% chitosan concentration (A0), 2% chitosan (A1), 4% chitosan (A2), and 6% chitosan (A3). The parameters observed in this research were straw diameter, water resistance, weight loss, water vapor transmission rate, and hue. The results of the research data were analyzed using Analysis of Variance (ANOVA) with the aim of identifying significant influences on each treatment and getting the best treatment from the results of observations. Based on the research results, it was found that differences in the concentration of chitosan as an ingredient for making edible coatings from cassava starch had significantly different effects on water resistance (80.25%-94.92%), weight loss (1.24%-6.05%), and water vapor transmission rate (2.48-7.11 grams/hour.m2). However, the difference between the diameter of the straw (0.07mm-0.19mm) and the hue (87.37-90.98) turned out to produce values that were not significantly different. The best research results were found in treatment A3 with a chitosan concentration of 6%. Keywords: Chitosan, Cassava Starch, Purun Tikus
